Fennel is the star of this week’s box. If you have never heard of fennel, let alone cooked with it, you are in for a surprising treat. Fennel is loaded with beneficial fiber, making it a great choice for staying heart healthy. The appearance of fennel is a cross between an onion and celery, though the taste could not be any different. Having more sweet, light notes, fennel’s taste is related to a licorice or anise-like flavor. These flavors bring out the sweetness of other produce like apples.

This week, we wanted to give you some courage when it comes to cooking with fennel. This Fennel, Cabbage and Apple Slaw is the perfect warm weather side dish. It’s crunchy, zesty and sweet. We are confident you will not be disappointed!

In a small bowl, whisk together the lemon juice and zest, mustard, 1/2 tsp salt, and 1/4 tsp pepper. Slowly add the olive oil, whisking to emulsify.

Put the cabbage, apple, and fennel in a large serving bowl. Just before serving, gently toss the salad with the dressing. Season to taste with additional salt and pepper, sprinkle the pecans on top, and serve.
