With Thanksgiving right around the corner, it's safe to say that fall flavors are on everyone's minds. There is nothing better than sitting down with family and friends to carve a turkey and dig into our favorite "once a year" dishes. This Turkey Stuffed Acorn Squash is the perfect way to get that Thanksgiving feeling any day of the year.
Quick, simple, and easy to prepare, this dish never fails to impress a crowd or bring together a family. The perfect combination of flavors makes this meal a personal favorite. Not to mention, when Thanksgiving does roll around, this is a perfect way to use all of that leftover turkey!
Instructions
- Preheat oven to 450 degrees F.
- Cut squash in half and place cut side up on a large baking sheet. Brush with olive oil and sprinkle with salt and pepper. Bake for 30 minutes.
- Prepare the stuffing by browning avocado oil, onion and garlic; cook until translucent, stirring occasionally.
- Add turkey and cook, stirring and breaking into pieces. Add remaining ingredients (except cheese) and cook for a few more minutes. Remove from heat and stir in 1/2 cup cheese.
- Add stuffing to the inside of the squash and sprinkle with remaining cheese.
- Bake for another 25 minutes or until tops start to turn golden brown.
