It goes without question that the best thing about the Fall is... Well, everything! The weather, the leaves, and comfy sweaters definitely make the top of my list. However, I think we can all agree that the number one thing that makes Fall our favorite season is the food. From fair foods to Thanksgiving feasts, the flavors of Fall are something to marvel at.

French Potato and Leek Bisque is no exception to this rule. The perfect meal for a night by the fire or a cozy afternoon on the couch, this recipe is a great way to warm up and get you into the fall spirit.

  1. In large pot, melt butter over medium heat.
  2. Add the leeks and garlic and cook until wilted, stir often - do not let it brown.
  3. Add the potatoes, broth, bay leaves, thyme and bring to a boil.
  4. Cover and turn the heat down to low. Simmer for 15 minutes or until the potatoes are soft.
  5. Remove the bay leaves. Purée using a hand-held immersion blender until smooth. (Can also use a standard blender to purée in batches.)
  6. Add heavy cream and bring to a simmer.
  7. Add salt and pepper to taste.
  8. Optional, garnish with dollop of sour cream and fresh chives.
