A Meal To Keep Coming Back To: Fall Squash Bake

Nothing says Fall like a good Ratatouille. Or in simpler terms, a yummy squash bake. Although there are no rats involved in the making of this video, we wanted to bring you all the simmering Italian spices of roasted squash and tomatoes. Today, I'll show you how simple it can be to whip up a quick, flavorful side dish. Round this recipe out with slices of cooked chicken sausage for a complete Fall meal you will keep coming back to.

Preheat the oven to 375ºF on the roasting setting.

Sliced squash, zucchini, and tomatoes.  

In a cast iron skillet, layer in a circle alternating squash, zucchini, and tomatoes until the skillet if full.

Sprinkle with garlic, Italian seasoning, and a small handful of parmesan cheese.

Drizzle with olive oil.

Bake for 20 minutes and sprinkle with another handful of parmesan cheese (more if you like cheese)

Bake for another 5 minutes or until cheese is slightly brown.
